Hi Susannah - I finally made your onion tart yesterday! It was so delish. I even added the rice wine vinegar like you suggested. However, mine didn't darken nicely in the oven (like yours did) (both my crust and the onions were still fairly light in colour) - just wanted to confirm the oven temp is 375.
